Có lẽ bánh sầu riêng là cái tên quen thuộc hơn so với bánh bông lan cuộn mít nhưng đối với những ai không thích mùi vị của sầu riêng bánh bông lan cuộn mít chắc chắn sẽ là món bánh hấp dẫn, được yêu thích hơn nhiều. Đặc biệt với cách làm bánh bông lan cuộn mít dưới đây bạn sẽ hoàn thành món bánh lạ miệng mà không tốn quán nhiều thời gian và nguyên liệu.
Tách hạt ra khỏi múi mít. Cho múi mít lên chảo đảo cho khô và dính lại.
Cho 45gr đường khuấy đều với lòng đỏ trứng. Đặt bát lên một bát nước sôi lớn hơn, khuấy cho đến khi đường tan và thành một hỗn hợp ấm. Thêm mật ong, dầu ăn và sữa vào một chảo nhỏ, đun đến khi ấm. Đổ hỗn hợp sữa vào bát lòng đỏ trứng đường, khuấy cho đến khi chúng hòa hợp.
Đánh đều lòng trắng trứng cho đến khi chúng sủi bọt (sử dụng máy trộn tay điện), từ từ cho đường vào đánh cho đến khi chúng bông cứng. Cho hỗn hợp lòng đỏ vào, dùng phới trộn đều cho đến khi chúng hòa quyện.
Thêm bột mì vào, đánh kiểu gấp lại (kỹ thuật fold) tạo thành hỗn hợp mịn. Đổ hỗn hợp vào khay nướng bánh đã lót sẵn giấy nướng. Nhẹ nhàng gõ khay lên mặt bàn để loại bỏ bọt khí. Cho bánh vào lò nướng đã được làm nóng sẵn ở nhiệt độ 170 độ C ở rãnh giữa từ 16-18 phút. Khi bánh chín, cho bánh ra khỏi khuôn rồi để trên giá cho nguội.
Nhẹ nhàng để bánh lên một tấm giấy nướng. Xúc phần thịt mít lên bánh rồi nhẹ nhàng cuộn bánh lại. Cuốn bánh vào giấy nến rồi để ở trong tủ lạnh hoặc để ở nhiệt độ phòng trước khi thưởng thức tùy ý!
