Trứng gà đập ra chén rồi đánh bông: vừa dùng để giữ mép nem không bị bung vừa bôi xung quanh nem. Giá đỗ rửa sạch, đẻ ráo.
Cho tất cả những nguyên liệu ở vào trong một tô rồi trộn đều. Cho 2 muỗng canh dầu hào, 1 muỗng canh nước mắm, 1/2 muỗng cà phê tiêu, 1 muỗng canh đường, giá đỗ vào trộn đều thêm một lần nữa.
Trải vỏ bánh gối ra mâm: lần lượt cho nhân vào từng miếng bánh gối và gói lại như gói nem bình thường, gói hết bánh và nhân. Dùng trứng bôi vào mép nem rồi bôi toàn bộ nem.
Sau đó cho nem lăn qua bột chiên xù đã cho sẵn ra đĩa. Cuối cùng cho dầu ăn vào chảo, chờ nóng thì thả nem vào chiên vàng đều. Vớt ra để giấy thấm bớt dầu.
Pha nước chấm: cho chút nước sôi để nguội vào chén, cho thêm 1 muỗng canh mật ong, 2 muỗng canh cốt chanh, 1 muỗng cà phê tương ớt, 1 muỗng canh đường khuấy đều. Sau đó bày ra nem ra đĩa chấm nước chấm thưởng thức nào!
