Đậu phụ mua về thấm khô, ép bớt nước và bóp nhuyễn. Dùng kéo cắt nhỏ phần vỏ vàng bên ngoài.
Nấm mèo ngâm với nước sôi cho nở. Cắt bỏ gốc và thái hạt lựu. Nấm mèo sẽ tạo độ giòn sụt cho chả chay.
Trứng gà đập ra chén, tách riêng 1 phần lòng đỏ trứng gà ra chén nhỏ. Trứng gà sẽ giúp chả có độ đông ngon. Đặc biệt với chả chay chỉ được sử dụng trứng gà công nhiệp không có trống nhé.
Cho đậu phụ, nấm, trứng gà bao gồm cả phần lòng trắng và đỏ, bột bắp, nước tương, hạt nêm vào tô. Dùng đũa trộn đều tất cả nguyên liệu sao cho trứng tan đều hòa quyện vào với đậu phụ và nấm.
Cho tất cả vào khuôn chịu nhiệt, hấp cách thủy. Dùng một miếng vải sạch bọc lại phần nắp nồi tránh tình trạng nước nhiễu xuống chả thành vết lỏng.
Khi chả bắt đầu chín, có độ đông đặc, bạn lấy phần lòng đỏ còn lại, thêm đầu mè vào trứng, đánh đều. Rướt lòng đỏ lên trên mặt chả, tiếp tục hấp cách thủy trong 3 phút.
Bạn có thể dùng tăm kiểm tra độ chín của chả, tăm không ướt dính là chả đã chín đều đó nhé. Chả chính bạn chỉ cần rắc tiêu lên trên là có thể thưởng thức với cơm nóng rồi.
