Cá diêu hồng làm sạch vảy, ruột cá rồi rửa sạch bằng nước nhiều lần. Hành lá và hành khô băm nhuyễn, chừa một ít hành để cắt khúc.
Bắc chảo dầu nóng cho hành vào phi thơm. Tiếp đến cho tương hột vào xào đều đến khi những hạt tương bắt đầu mềm.
Cho cá diêu hồng kết hợp 2 bát ăn cơm nước lọc, nấu trên lửa nhỏ 20 phút và nêm gia vị cho vừa ăn. Kho cá đến khi nước gần cạn thì tắt bếp, rắc hành lá cắt khúc và ớt dùng chung với cơm.
